Some Definitions...

Aging or 2 Weeks Of Hanging: means that the beef side is kept hanging in the cooler for at least 2 weeks to tenderize.

Beef Side means just that, a side of beef. Average weight will be 320lbs, and should fit into any basement size freezer and will cost approximately $800.

Beef Split Side: a full side of beef split into two orders with cuts sorted as fairly as possible between the two orders. The cuts may not be distributed exactly equally since an odd number of steaks and roasts happen out of a side, but our butcher keeps it really fair so that both orders "A" and "B" will have the same type of cuts and are of equal value. Average weight, so you can budget, is 160lbs of hanging weight and costs approximately $400. A split side will fit into any apartment size freezer.

Flash Frozen: means freezing at -25C. All the meat is frozen within hours and it will keep all year. To thaw, follow the safe rules and methods you already use.

Hanging Weight or Precut Weight: means as the side of beef hangs but before cutting your order.

Organ Meats: include heart, tongue, liver and kidney and are yours free of charge. They are not weighed and are not part of the weight you pay for.

Trimmings:are the fat and grisle and leftovers from your order. You can take the trimmings for your, or your neighbour’s dog, and the bones will make a fantastic soup base.
