How is my beef packaged? We use a Provincially inspected local family packer that has been in business for over 30 years. Typical butcher wrap paper is used. All orders are specially wrapped and flash frozen at -25 celsius. What is the difference between hanging weight and live weight? Live weight is the weight of the animal prior to processing. Hanging weight is as the side of beef hangs but before preparation. How much does a Side Of Beef weigh? Average weight will be 320lbs hanging weight, and should fit into any basement size freezer and will cost approximately $800. What is a Split Side Order? A Split Side is a full side of beef split into two orders with cuts sorted as fairly as possible between the two orders. The cuts may not be distributed exactly equally since an odd number of steaks and roasts happen out of a side. Our butcher keeps it really fair so that both orders "A" and "B" will have the same type of cuts and are of equal value. Average weight, so you can budget, is 160lbs of hanging weight and costs approximately $400. A split side will fit into any apartment size freezer. What can the Trimmings be used for? The Trimmings are the fat and grisle and leftovers from your order. They make up approximately 20% of the total weight of your side. You can take the trimmings for your, or your neighbour’s dog, and the bones will make a fantastic soup base. So If I order a side or split-side, how much beef will I actually get? Because there will be a 20% loss in total weight from trim (gristle, bones) the resulting side weighs approximately 256lbs. A Split Side order weighs in at approximately 128lbs of beef. What do I pay?

Are there any special cooking methods needed for this beef? You will find our corn fed beef to be much leaner than what you may be familiar with, and care is needed to bring out the best flavour and texture as overcooking can make it tough.
