Welcome to the newest edition to our site, a recipe page! I hope as time goes on that you will provide me with your own works of art so that I can post them here for all to enjoy.

While we gather momentum, here is our first instalment...

 

Rawhide Round-up Chilli

Wrangler NJ's own stick-to-your ribs recipe is actually best if it is made ahead! This allows the different spices and flavours more time to blend and to be truly appreciated after that long cattle drive! Serve with Parmesan cheese on the side, warm whole grain rolls and don't forget a side of sumptuous Ceasar Salad.

Make-ahead: Let cool for 30 minutes; refrigerate until cold. Refrigerate in airtight container for up to 3 days or freeze for up to 1 month

Ingredients

  • 2lbs (1kg) PVR ground beef
  • 1 onion , chopped
  • 2 carrot , chopped
  • 1 head broccoli, chopped
  • 1 head cauliflower, chopped
  • 2 cups green beans, trimmed
  • 3 cloves garlic , minced
  • 2 tbsp (15 mL) chili powder
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • Pinch of curry
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 can (28 oz/796 mL) crushed tomato
  • 1 can (19 oz/540 mL) chickpeas , drained and rinsed
  • 2 can (19 oz/540 mL) red kidney beans , drained and rinsed
  • 2 can (28 oz/650 mL) tomato sauce

Preparation

  • Sauté beef over medium-high heat, breaking up with spoon, until no longer pink, about 4 minutes.
  • Stir Fry onion, carrot, broccoli, cauliflower, green beans, garlic, until vegetables have softened, about 8 minutes.
  • In a large pot, combine Sautéed Beef, and Stir Fried vegetables, add chili powder, thyme, oregano, curry, salt, pepper, tomatoes, chickpeas, kidney beans and tomato sauce; bring to boil.
  • Reduce heat and simmer until thickened, about 30 minutes.
